Why the Pickled Tongue?
Definition of Pickle: 1. Any brine, vinegar, or spicy solution used to preserve or marinate food. 2. A vegetable or meat; specifically a cucumber or tongue, preserved in such a solution.
Why a Pickle? As it relates to the action of altering an ingredient… the basis of what the culinary arts stems; also as it relates to the art of preservation and being bottled up or ‘kept in a jar’.
Definition of Tongue: A fleshy, movable muscle on the floor of the mouths of most vertebrates that bears sensory end organs and small glands that functions in taking, speech in humans, tasting, and swallowing food.
Why a Tongue? The nature of the tongue relates to the sensuality we have for our craft, our sense of taste, and the words that we choose to use on these pages.
So why the Pickled Tongue? Because there are some around me who would prefer that my tongue stay preserved in a jar (my mouth).
And also because this was my late Grandma Toba’s favorite sandwich!
