Dear Chef Foss,
I had the pleasure of staying at The Palmer House with my daughter over this last weekend and Saturday night we had the delightful experience of dining in the Lockwood Restaurant.
The service was wonderful, and the atmosphere quiet and conducive to conversation and our leisurely meal. We ordered a superb bottle of wine--but for me it was the Marrow-Crusted Bone-in Beef Tenderloin that was absolutely one of the best things I have ever tasted! The perfectly-rare meat just melted in my mouth and the marrow crust was sublime! I was sorry when the meal came to an end!
I am 65 years old and have had the privilege to travel the world over and to experience many fine culinary pleasures during my journeys. For me fine food and locally served specialties are a great way to get to know a country.
I am not a food critic nor a professional cook--I'm just a simple soul, who happens to enjoy good food. But, I felt compelled to write to you about how much I enjoyed my dinner the other night--It was superb and will be remembered with delicious fervor!
Thank you for your time,
A most satisfied guest,
Wendy Louise Feiereisen, Wisconsin
